Yummmm

I am a fitness professional. Fitness is my passion; I love it, crave it, and want to share it with as many people as possible. That said, today's post is about food again. =)


The goal for the afternoon was stuffed bell peppers. I like bell peppers a lot, but usually when I eat them it consists of slicing them down the middle, ripping the two halves apart, tearing out the seeds, cutting them into strips, and eating them like carrots. Raw and crunchy, minimal mess and highly functional. I saw this recipe and decided maybe it was time to take my bell peppers skills to the next level.

So I did. Oh it was difficult to seed them with out breaking and the number of dishes I got dirty was sort of ridiculous. (I also made cookies today so that added to the dish stack!) These bad boys have couscous, olive oil, balsamic vinegar, pine nuts, craisins, and sauted red onion in them. YUMMMMMMM. Well worth the dishes to wash! The recipe said to only fill them 3/4 full because the couscous would expand during baking, but from my picture I think I could have filled them a bit fuller.


The flavors interplayed so wonderfully. The bell pepper became this edible container of goodness holding the pine nuts and couscous which tasted hearty and brought an element of umami, the craisns and  onion were sweet and delicious. Yum. 

I am looking forward to leftovers at lunch tomorrow. =)
